In 2002 Redcafes began their cooperative with just 600 members in the Verazruz region. Today there are over 1,500 members in their fully organic certified group.

In the Mountain Water™ process, pre-selected green coffee beans are immersed in water which has soluble coffee compounds to extract the caffeine while maintaining the flavor components. To separate the caffeine from the water, the resulting solution is passed through a cellulose and activated charcoal filter, which removes the caffeine. As a result, these coffees are between 97-99% caffeine free.
