For light, breakfast-style chocolate:
In a small saucepan, warm 1 cup of milk over medium heat until small bubbles form around the edges. Add 2 level tablespoons of drinking chocolate and, stirring constantly, heat to a gentle simmer. (Do not allow chocolate to boil!) Serve immediately.
For an intensely flavored, dessert-style chocolate: Prepare as above, reducing milk by half. Serve in demitasse cups. (May also be made with soy milk or water.)
Store chocolate in a cool, dark place in an airtight container
